Steps

  • Preheat the oven to 200°C.
  • Fry the lamb in olive oil for 5 minutes until golden-brown and season with salt and pepper.
  • Add the onion and fry for 3 minutes before stirring in the wine.
  • Reduce the wine by one third, then add the stock and simmer for 3 minutes.
  • Transfer the lamb mixture into a small ovenproof dish and allow to cool.
  • Boil the swede pieces for 8 minutes or until tender, then drain and mash until smooth.
  • Spread the mashed swede over the lamb and dot with butter.
  • Bake in the oven for 10 minutes until the top is crisp and golden.
