Steps

  • Wash the fish and cut into 5cm pieces.
  • Wash the prawns and remove their shells.
  • Melt 20g of butter in a large frying pan and fry the garlic until it colours.
  • Add the seafood, spring onions, white wine, and lemon zest.
  • Cover the pan and simmer for two minutes.
  • Remove the lid and add the tomatoes, Tabasco sauce, and chopped herbs.
  • Simmer the mixture for two minutes more.
  • Turn off the heat and stir in the remaining 20g of butter.
  • Serve immediately in warm bowls garnished with fresh herb sprigs.
