Steps

  • Heat 175ml of olive oil in a large heavy-based frying pan over high heat.
  • Add the sea bream, garlic, quartered tomatoes, torn basil, and salt to the pan.
  • Pour in 400ml of water and reduce the heat slightly.
  • Cook the fish for 7 minutes on each side until the eyes turn white.
  • Transfer the fish to a large serving dish.
  • Increase the heat and boil the sauce for 30 seconds to thicken.
  • Pour the sauce over the fish and serve immediately.
