Whisk the remaining egg with salt, nutmeg, and milk to create an egg wash.
Mould each sausage patty gently around a soft-boiled egg.
Trim excess meat while ensuring the egg is completely sealed.
Dredge the eggs in salted flour, dip in egg wash, and coat with breadcrumbs.
Heat oil to 180°C and fry eggs in batches for 3 to 4 minutes.
Transfer to a baking tray and bake for 10 minutes.
