Steps

  • Sauté the chopped onions in oil until softened but not browned.
  • Mix the onions with sausage meat and black pudding, then season with salt and pepper.
  • Shape the mixture into four individual balls and chill in the refrigerator.
  • Boil four eggs for 5.5 minutes, then cool in ice water and peel.
  • Encase each boiled egg inside a portion of the meat mixture.
  • Dredge each sphere in flour, dip in beaten egg, and coat with breadcrumbs.
  • Deep fry the eggs at 160°C to 180°C until they float and are cooked through.
