Steps

  • Place the cooked potatoes in a bowl and mash with butter and milk until smooth.
  • Season the mash with salt and white pepper and keep warm.
  • Drizzle the scallops with olive oil.
  • Heat a frying pan until very hot and sear the scallops for 90 seconds on each side.
  • Place mash on plates, drizzle with truffle oil, and top with the scallops.
