Method

Heat 30g of butter in a small frying pan and cook apple pieces for 5 minutes until golden.

Add raisins and cinnamon and cook for 4 minutes until apples are soft.

Squeeze in lemon juice and stir to combine.

Combine milk and cream in a saucepan and bring to a boil.

Remove from heat and allow the liquid to cool slightly.

Whisk the whole egg, egg yolk, and sugar together in a bowl.

Slowly pour the warm milk mixture into the eggs while whisking.

Return custard to the pan over gentle heat and stir until thickened.

Strain the custard through a sieve into a clean bowl.
