Steps

  • Preheat the oven to 200°C.
  • Place the chopped lemon pieces into the fish cavity and score the skin with a knife.
  • Mix oil, chilli, garlic, parsley, and lemon zest, then rub onto the fish skin.
  • Combine egg whites and salt in a bowl and mix well.
  • Spread one third of the salt mixture onto a lined baking tray.
  • Place the fish on the salt layer and cover completely with the remaining mixture.
  • Bake for 35 minutes until the fish is cooked through.
  • Remove the hard salt crust and drizzle the fish with lemon juice.
  • Serve with roasted vegetables and chestnuts.
