Steps

  • Beat the egg whites in a bowl using an electric mixer until they foam.
  • Add 450g of icing sugar and beat on high speed until thick and glossy.
  • Stir in the remaining 100g of icing sugar and the glycerine until combined.
  • Beat the mixture until it forms soft peaks when the whisk is removed.
  • Cover with a damp tea-towel and store in a cool place if not using immediately.
