Preheat the oven to 230°C.
Pour boiling water over the pork rack in the sink and drain.
Pat the pork dry, rub with olive oil, season, roll into a cylinder, and tie with string.
Place pork in a roasting tray and roast for 30 minutes.
Reduce oven to 180°C and cook for 60 to 75 minutes until tender.
Arrange apple chunks on a separate roasting tray.
Sprinkle the mixed spices over the apples and stir to coat.
Dot 50g of butter over the apples and add 30ml of water.
Roast apples for 20 minutes, then mash with a fork and add sugar.
Boil potatoes in salted water for 12 to 15 minutes until tender.
Drain potatoes and dry over low heat for one minute.
Mash the potatoes or pass them through a ricer into a clean pan.
Simmer milk and 110g of butter together, then beat into the mashed potatoes.
Fry spring greens in 50g of butter and 50ml of water until wilted, then season with nutmeg.
Rest the pork for 15 minutes and simmer the roasting juices on the hob.
Slice the pork and serve with mash, greens, apple sauce, and pan juices.
