Steps

  • Preheat the oven to 200°C.
  • Heat olive oil in an ovenproof pan and season the asparagus.
  • Fry asparagus for 4 minutes then roast in the oven for 10 minutes.
  • Heat duck fat in a frying pan and fry the egg until cooked.
  • Toss herbs, lemon juice, chilli, and olive oil in a bowl with seasoning.
  • Plate the herb salad and asparagus then top with the fried egg.
