Steps

  • Soak the dried beans overnight in a large bowl with plenty of water.
  • Boil the beans in 1.2 litres of water until they are completely tender.
  • Reserve the cooking water and drain the beans.
  • Heat the olive oil and butter in a large pan and sweat the onion until soft.
  • Add the bacon to the pan and fry until fully cooked.
  • Mash the beans and stir them into the onion and bacon mixture.
  • Mix in enough reserved cooking water to reach a consistency similar to double cream.
