Steps

  • Heat oil in a pan over low to medium heat.
  • Fry onion, chilli, garlic, and turmeric for 8 minutes until softened.
  • Stir in the par-boiled potatoes, curry powder, and tomatoes.
  • Cover the pan and cook for 5 minutes while stirring occasionally.
  • Add beaten eggs and stir until they are scrambled.
  • Cook for 4 minutes and season with salt and pepper.
  • Remove from heat and mix in coriander and lime juice.
  • Divide into bowls and serve with warm naan bread.
