Method

Heat oil in a pan and fry potato cubes for 7 minutes until golden-brown.

Add 100ml white wine and boil until liquid reduces by half.

Pour in stock, tomato, and cream and bring to a simmer.

Place fish into the pan and poach for two minutes until cooked.

Season with salt and pepper and stir in chopped chives.
