Steps

  • Brush the peeled pears with lemon juice.
  • Simmer 450ml water and 200g sugar in a large pan until slightly thickened.
  • Add pears to the pan, cover, and poach for 25 minutes.
  • Transfer the pears to six individual serving plates.
  • Heat 150ml double cream gently in a clean pan without boiling.
  • Remove from heat and stir in chopped chocolate until smooth.
  • Pour the chocolate sauce over the pears and serve.
