Steps

  • Flatten the steak pieces between cling film to a 1cm thickness using a rolling pin.
  • Combine coriander, chilli flakes, peppercorns, oregano, mace, bay leaf, garlic, salt, and oil in a bowl.
  • Coat the steaks in the spice mixture and marinate as long as possible.
  • Sear the steaks in a smoking hot pan for one minute per side with added butter until blackened.
  • Place two steak pieces into each roll and serve immediately.
