Steps

  • Cut the pork into 5cm long strips.
  • Combine the marinade ingredients in a medium bowl and marinate the pork at room temperature.
  • Drain the pork and discard the marinade.
  • Heat a wok until hot and add the groundnut oil.
  • Stir-fry the crushed garlic for 15 seconds until golden brown.
  • Add the pork and stir-fry for 3 minutes.
  • Add the pineapple, coriander, soy sauce, and sugar and stir-fry for 3 more minutes.
  • Garnish with fresh coriander sprigs and serve.
