Steps

  • Par-boil potatoes in salted water for 8 minutes until partially cooked.
  • Cool potatoes completely and scratch surfaces roughly with a fork.
  • Preheat 0.5cm of oil in a roasting tin until sizzling hot.
  • Carefully add potatoes to the hot oil and baste immediately to coat.
  • Roast for 45 minutes, turning at least once during the cooking process.
  • Increase heat if necessary to achieve desired browning and crispness.
  • Drain potatoes well and keep warm in an uncovered dish.
  • Season with salt and pepper immediately before serving.
