Method

Preheat the oven to 110°C and line two baking sheets with parchment.

Slice the pears into thin rounds using a mandolin or sharp knife.

Lay the pear slices in a single layer on the prepared baking sheets.

Stir the sugar and ginger together and sprinkle over each pear slice.

Bake for three hours, turning the slices over halfway through the cooking time.

Remove the crisps from the oven and allow them to cool completely.

Shake the remaining ginger sugar from the sheet over the cooled pear crisps.
