Steps

  • Preheat the oven to 180°C and line a tray with greaseproof paper containing a 20cm circle.
  • Whisk egg whites with half the sugar and salt until soft peaks form.
  • Beat in remaining sugar until stiff and fold in cornflour, cream of tartar, vinegar, and vanilla.
  • Mould the mixture onto the paper circle and smooth the sides.
  • Place in the oven and immediately reduce the temperature to 150°C for 75 minutes.
  • Turn off the oven and allow the meringue to cool completely with the door ajar.
  • Invert onto a plate, top with whipped cream, and decorate with tropical fruit.
