Preheat the oven to 220°C.
Line two large baking trays with paper and grease them with butter.
Toss the cheese, poppy seeds, and sesame seeds together in a small bowl.
Place a 9cm ring on the tray and sprinkle a thin layer of the cheese mixture inside.
Lift the ring and place a lollipop stick so the tip touches the center of the disc.
Repeat to make 10 discs leaving 3cm spaces between them.
Cover the part of the stick resting on the disc with the remaining cheese.
Bake for five minutes until golden-brown and bubbling.
Transfer the paper to a rack and cool for 2 minutes until crisp.
Carefully remove each lollipop using a palette knife.
