Steps

  • Preheat the oven to 180°C.
  • Fry the potato chips in 2 tablespoons of olive oil for 4 minutes until they begin to colour.
  • Season potatoes with salt and pepper then bake for 10 minutes until tender.
  • Stir the chopped parsley into the cooked potatoes.
  • Sear the salmon in the remaining oil then add lemon juice and season.
  • Fry the salmon while basting with juice until cooked through.
  • Serve the salmon over the chips with a lemon wedge.
