Steps

  • Preheat the oven to 180°C.
  • Melt the butter and chocolate in a heatproof bowl over a pan of simmering water.
  • Stir the mixture together and let it cool.
  • Whisk the eggs and sugar for 5 minutes until pale and light.
  • Gently fold the egg mixture into the cooled chocolate mixture.
  • Fold in the flour and cocoa powder.
  • Grease and flour six 200ml ramekins.
  • Divide the mixture into ramekins and bake on a tray for 8 minutes until set with a wobbly center.
  • Loosen the puddings and carefully turn them out onto plates.
  • Dust with cocoa powder and serve with a dollop of mascarpone.
