Steps

  • Preheat the oven to 200°C.
  • Mix the mincemeat, cherries, apricots, lime zest, lime juice, basil, and allspice in a bowl.
  • Roll the pastry on a floured surface to a 38x10cm rectangle.
  • Spoon the fruit mixture in a line across the pastry middle.
  • Brush the pastry edges with the egg and cream mixture and roll to seal.
  • Brush the top with egg wash, crimp the edges, and sprinkle with sugar.
  • Bake on a greased tray for 15-20 minutes until golden-brown.
  • Cool for 10 minutes before slicing to serve.
