Steps

  • Mix all marinade ingredients in a bowl until combined.
  • Rub marinade into chicken and chill for 10 minutes to 2 hours.
  • Preheat your oven to 200°C.
  • Layer rosemary, lemon slices, potatoes, and chicken in a roasting tray.
  • Coat with remaining marinade and season with salt and pepper.
  • Roast for 30-35 minutes until the chicken juices run clear.
  • Rest the chicken covered for 10-15 minutes before garnishing with parsley.
