Steps

  • Mix flours, salt, oil, and 30ml water by hand to form a dough.
  • Knead dough for one minute until smooth and rest for 5-10 minutes.
  • Divide dough into four pieces and roll into thin circles on a floured surface.
  • Cook each tortilla in a dry pan for 2-3 minutes per side until golden.
  • Store cooked tortillas in a clean tea towel to keep warm.
  • Mix beef with onion, pepper, and spices to coat the meat evenly.
  • Combine yoghurt and lime juice and set aside.
  • Fry the beef mixture over high heat for 3-4 minutes until browned then rest.
  • Sauté garlic and cumin seeds in oil for two minutes.
  • Add black beans and heat through while crushing lightly with a spoon.
  • Mix chopped tomatoes, onion, chilli, lime juice, and zest for the salsa.
  • Assemble by spreading beans, beef, salsa, lime yoghurt, and lettuce onto tortillas.
