Steps

  • Preheat the oven to 150°C.
  • Heat olive oil in a large casserole dish and brown the beef for 5 minutes.
  • Add marrow bones and cook for another 3 minutes.
  • Remove beef and bones from the pan and set aside.
  • Fry onions in the pan juices until softened.
  • Stir in potatoes and swede and cook for 3 minutes.
  • Add leeks, carrots, and bay leaves, then season with salt and pepper.
  • Return beef and bones to the dish and cover with beef stock.
  • Cover with a lid and bake for 2.5 to 3 hours until beef is tender.
  • Serve the casserole with crusty bread.
