Steps

  • Preheat the oven to 200°C.
  • Mix the flour, sugar, suet, and lemon zest in a large bowl.
  • Gradually add water to the center to form a soft dough.
  • Knead the dough lightly until smooth and divide into five portions.
  • Roll each portion on a floured surface into a 1cm thick rectangle.
  • Spread lemon curd over the dough leaving a 1cm border.
  • Roll the dough into a pinwheel and seal the ends with water.
  • Place onto greased baking trays and brush with milk.
  • Bake for 35 to 40 minutes until golden brown.
