Steps

  • Preheat the oven to 180°C and line two baking trays with parchment.
  • Whisk butter and icing sugar until pale and smooth.
  • Beat in the flour gradually followed by salt and vanilla extract.
  • Add the egg whites and whisk into the mixture.
  • Pipe 8cm lines of mixture onto the trays using a 1cm nozzle.
  • Leave 5cm between each biscuit to allow for spreading.
  • Chill the trays in the fridge for 20 minutes until firm.
  • Bake for 10 to 12 minutes until the edges are light golden-brown.
  • Transfer to a wire rack using a palette knife to cool.
