  • Soften 1 litre of vanilla ice cream and mix in the cracked black pepper.
  • Adjust pepper to taste, mix thoroughly, and re-freeze.
  • Soften the second litre of vanilla ice cream and mix in the peri-peri powder.
  • Adjust peri-peri to taste, mix thoroughly, and re-freeze.
  • Soften the final litre of vanilla ice cream.
  • Simmer passion fruit juice, sugar, and 25ml water in a pan until syrupy.
  • Cool the syrup, fold into the ice cream, and re-freeze.
