Steps

  • Preheat the oven to 180°C.
  • Pulse flour and 175g butter in a food processor until crumbly.
  • Add egg yolk and water gradually to bind the mixture into a dough.
  • Knead dough on a floured surface and roll into a flat circle.
  • Place pastry on a lined baking sheet and arrange sliced apples in the center.
  • Sprinkle sugar and cinnamon over apples and dot with the remaining 25g butter.
  • Fold and pinch the pastry edges to create a crust.
  • Bake for 8 to 10 minutes until golden and crisp.
  • Whisk double cream with cinnamon and icing sugar to soft peaks.
  • Serve the pie with cinnamon cream and a dusting of icing sugar.
