Steps

  • Place the couscous into a heatproof bowl and pour over 150ml of hot stock and olive oil.
  • Cover the bowl with cling film and leave to stand for five minutes.
  • Add the prepared beans, tomatoes, lemon juice, and parsley to the hydrated couscous.
  • Season with salt and pepper and stir the mixture well.
  • Transfer the couscous onto serving plates to serve.
