Steps

  • Mix pork, chilli, garlic, fennel seeds, wine, salt, and pepper in a bowl.
  • Divide mixture into 12 pieces and roll into 8cm long by 3cm diameter sausages.
  • Grill peppers on a hot griddle until skins are black.
  • Cool peppers then peel skins and remove seeds.
  • Blend peppers, capers, garlic, chilli, and anchovies in a food processor until smooth.
  • Pour in oil slowly while blending until reaching a pouring consistency.
  • Heat 15ml of oil in a non-stick pan.
  • Fry sausages over medium heat for 10 minutes until golden-brown.
  • Serve the sausages with the pepper sauce.
