Halibut and Spinach en Papillote

Steps

  • Preheat the oven to 200°C.
  • Cut a 30cm circle of baking paper and a matching circle of foil.
  • Lay the paper on the foil, fold in half, then open it back up.
  • Lay lemon slices in the middle of one half of the paper.
  • Place the halibut on the lemon and season with salt and pepper.
  • Top with spinach and pour over the white wine.
  • Fold the paper and foil over and scrunch the edges tight to seal.
  • Place on a baking sheet and bake for 12 to 14 minutes.
  • Transfer the parcel to a plate and slash open to serve.
