Steps

  • Heat olive oil in a frying pan over medium heat.
  • Season the salmon with salt and pepper and fry skin-side down for 3 minutes.
  • Turn the salmon over and fry for a further 2 minutes.
  • Melt butter in a saucepan and add peas, vinegar, and a splash of hot water.
  • Cook the peas for 4 minutes until soft.
  • Stir in extra virgin olive oil, season to taste, and mash roughly.
  • Plate the mushy peas, top with the salmon skin-side up, and garnish with lemon.
