Preheat the oven to 200°C.
Season pork chops with salt and pepper and rub with olive oil.
Sear pork in a hot griddle pan until golden, then bake for 5 minutes.
Rest the pork for 5 minutes after removing from the oven.
Stir fry cabbage in butter for 3 minutes until tender and season.
Boil cauliflower florets in salted water for 2 minutes.
Drain cauliflower and place in a greased oven-proof dish.
Melt butter and flour in a pan and cook for 2 minutes until golden.
Whisk in milk gradually and simmer for 3 minutes to thicken.
Stir in egg yolks, mustard, Worcestershire sauce, and half the cheese.
Pour sauce over cauliflower and top with the remaining cheese.
Grill the dish until the cheese is golden-brown.
Serve the pork on a bed of cabbage with cauliflower cheese on the side.
