Steps

  • Preheat the oven to 200°C.
  • Season pork chops with salt and pepper and rub with olive oil.
  • Sear pork in a hot griddle pan until golden, then bake for 5 minutes.
  • Rest the pork for 5 minutes after removing from the oven.
  • Stir fry cabbage in butter for 3 minutes until tender and season.
  • Boil cauliflower florets in salted water for 2 minutes.
  • Drain cauliflower and place in a greased oven-proof dish.
  • Melt butter and flour in a pan and cook for 2 minutes until golden.
  • Whisk in milk gradually and simmer for 3 minutes to thicken.
  • Stir in egg yolks, mustard, Worcestershire sauce, and half the cheese.
  • Pour sauce over cauliflower and top with the remaining cheese.
  • Grill the dish until the cheese is golden-brown.
  • Serve the pork on a bed of cabbage with cauliflower cheese on the side.
