Steps

  • Combine the lamb, rosemary, garlic, and oil in a bowl, then marinate for at least ten minutes.
  • Heat a griddle pan until very hot.
  • Season the lamb with salt and pepper and griddle for two minutes per side.
  • Remove the lamb from the pan and let it rest.
  • Cook the broccoli on the hot griddle, turning frequently, until charred.
