Steps

  • Rub the lamb steak with olive oil and season with salt and pepper.
  • Chargrill the lamb in a hot griddle pan for 4-5 minutes per side.
  • Rest the cooked meat in a warm place.
  • Fry the onion in a pan with olive oil until softened.
  • Add the garlic and cook for one minute.
  • Stir in the leeks and white wine then simmer for 2-3 minutes.
  • Add the double cream and simmer until the sauce thickens slightly.
  • Season the creamed leeks to taste and serve topped with the lamb.
