Steps

  • Heat golden syrup, sugar, and butter in a saucepan until dissolved.
  • Remove from heat and stir in the cream and spices.
  • Add flour and bicarbonate of soda to the mixture and stir well.
  • Flatten the dough between parchment paper and chill in the fridge for 2-3 hours.
  • Preheat the oven to 180°C.
  • Roll the dough between paper until 1cm thick.
  • Roll the dough on a floured surface to a 5mm thickness.
  • Cut out shapes with a floured cutter and place on a lined tray.
  • Bake for 8-10 minutes until brown at the edges.
  • Pierce holes for hanging while warm and cool on a wire rack.
