Steps

  • Place a wire rack inside a large pot on the hob over moderate heat.
  • Add ginger essential oil drops to the bottom of the pot.
  • Sit scallops on the rack, cover, and infuse for 2 to 5 minutes.
  • Preheat a frying pan over high heat.
  • Remove scallops from the pot and drizzle with 15 ml of groundnut oil.
  • Season with black pepper and fry for 30 seconds on each side.
