Steps

  • Cut the chicken into 2.5cm cubes.
  • Peel and seed the cucumber, cut into 2.5cm cubes, salt, and drain for 20 minutes.
  • Rinse the cucumber in cold water and blot dry with kitchen paper.
  • Heat a wok or large frying pan until very hot.
  • Add the groundnut oil and stir-fry the chicken cubes for a few seconds.
  • Add garlic, spring onions, soy sauce, wine, and chilli sauce then stir-fry for 2 minutes.
  • Add the cucumber cubes and sesame oil then stir-fry for another 3 minutes.
