Steps

  • Heat the vegetable oil in a deep saucepan until a breadcrumb sizzles.
  • Deep-fry the tortilla triangles until golden and drain on kitchen paper.
  • Blend olives, chilli, coriander, chives, olive oil, tomato purée, garlic, Tabasco, and lemon juice into a coarse paste.
  • Serve the tapenade in a bowl surrounded by tortilla crisps and garnished with lemon and parsley.
