Method

Heat 7.5ml of olive oil in a small frying pan over a high heat.

Fry 0.5cm salmon slices for 20 seconds on each side until just cooked.

Transfer salmon to a plate and squeeze over juice from half a lemon.

Combine the pepper, onion, chilli, parsley, remaining oil, and lemon zest and juice in a bowl.
