Steps

  • Preheat the oven to 150°C and line a 20cm square baking tin with paper.
  • Melt the butter in a medium pan over a low heat.
  • Brush the baking tin with a small amount of the melted butter.
  • Add the golden syrup and sugar to the pan and heat gently until dissolved.
  • Remove the pan from the heat and stir in the oats, lemon zest, and ginger.
  • Pack the mixture into the tin and press down firmly.
  • Bake in the oven for 40 minutes.
  • Cool for 15 minutes before turning out and cutting into squares.
