Method

Preheat the oven to 150°C and line a 20cm square baking tin with paper.

Melt the butter in a medium pan over a low heat.

Brush the baking tin with a small amount of the melted butter.

Add the golden syrup and sugar to the pan and heat gently until dissolved.

Remove the pan from the heat and stir in the oats, lemon zest, and ginger.

Pack the mixture into the tin and press down firmly.

Bake in the oven for 40 minutes.

Cool for 15 minutes before turning out and cutting into squares.
