Steps

  • Season steaks with salt and pepper and brush with 30ml of oil.
  • Sear steaks in a smoking hot pan for 3-4 minutes per side and set aside to rest.
  • Sauté shallots and garlic in the remaining oil for 2-3 minutes until soft.
  • Add morels to the pan and fry for 2 minutes before seasoning.
  • Stir in wine and thyme then simmer for 6 minutes until the liquid thickens.
  • Pour the sauce over the steaks and serve immediately.
