Method
1
Boil rice in double the volume of water with salt for 20-30 minutes until tender.

Grate carrots and slice spring onions into a bowl with half the coriander.

Shake the lime, honey, chillies, oil, and vinegar together in a jar.

Mix the drained rice and dressing into the vegetables and season to taste.

Garnish with the remaining coriander and serve.
