Steps

  • Preheat the oven to 180°C.
  • Mix the dry ingredients together in a bowl.
  • Rub in the butter and lard until the mixture resembles fine breadcrumbs.
  • Add cold water to form a stiff dough and refrigerate for 20 minutes.
  • Roll out the dough on a lightly floured surface to 3mm thickness.
  • Cut out biscuits using a 9cm round cutter.
  • Prick the tops of the biscuits leaving a 5mm plain border.
  • Bake on wire racks for 14 to 16 minutes until dry but not browned.
  • Cool the biscuits completely and serve with chilled butter.
