Steps

  • Remove meat from duck legs and discard skin, bone, and tendons.
  • Place the duck meat into a bowl and mash thoroughly with a fork.
  • Gradually incorporate the duck fat while continuing to mash the meat.
  • Stir in the chopped parsley and season with salt and pepper.
  • Spoon the mixture into four small ramekins and refrigerate until set.
  • Remove the ramekins from the fridge ten minutes before serving.
