Steps

  • Dust a medium baking tray well with flour.
  • Sift the flours and salt into a large bowl, reserving any large grains.
  • Stir the yeast, honey, and most of the water into the flour to form a smooth dough.
  • Shape the dough into a smooth ball and place it on the prepared tray.
  • Cover loosely with oiled clingfilm and leave in a warm place for one hour to double in size.
  • Preheat the oven to 200°C.
  • Remove the film, slash the top with a knife, and brush the loaf with milk.
  • Sprinkle the reserved grains over the top of the loaf.
  • Place 10 ice cubes in the bottom of the oven to create steam.
  • Bake for 30–40 minutes until the loaf sounds hollow when tapped.
  • Cool the bread on the baking tray before serving.
