Dust a medium baking tray well with flour.
Sift the flours and salt into a large bowl, reserving any large grains.
Stir the yeast, honey, and most of the water into the flour to form a smooth dough.
Shape the dough into a smooth ball and place it on the prepared tray.
Cover loosely with oiled clingfilm and leave in a warm place for one hour to double in size.
Preheat the oven to 200°C.
Remove the film, slash the top with a knife, and brush the loaf with milk.
Sprinkle the reserved grains over the top of the loaf.
Place 10 ice cubes in the bottom of the oven to create steam.
Bake for 30–40 minutes until the loaf sounds hollow when tapped.
Cool the bread on the baking tray before serving.
