Steps

  • Mix the mineral water, salt, and oil in a bowl.
  • Fold in the flour until a soft dough forms.
  • Wrap the dough and chill in the fridge for 30 minutes.
  • Preheat the oven to 180°C.
  • Divide the dough into four balls and roll each very thinly.
  • Place dough over a round board to use as a size template.
  • Spread a thin layer of your chosen filling over the pastry.
  • Fold the edges inward to create pleats and place on a tray.
  • Whisk the eggs with yoghurt and brush over the pies.
  • Bake for 40 minutes until golden brown.
  • Serve warm with a fresh salad.
